Hello Readers! I love the springtime…the birds singing, the trees starting to bud, tulips in bloom and my birthday! I also love the spring because to me that’s when you start anew.
Everything has been washed away by the spring showers, all things old and drab are new and bright, everything to me seems fresher and lighter, even my meals. Yep, along with the spring season is when we start taking off our coats and noticing a little winter pudge around the middle. So, along with that, are new resolutions to walk in the park, eat better and get out more.
So, with that said I’ve put together a quick, lite dinner or brunch that you can make at home for family and friends. As you know many of us will start our outdoor dining, BBQs and summertime parties. Oooh, I can’t wait …you all know I love an outdoor gathering!
Well, here is this week’s Spring Time Recipe picks - I hope you all enjoy. And here’s to springtime and all the fresh starts to living a happier and healthier life!
- 3 eggs
- 1/2 C. melted butter
- 1/2 C. Bisquick
- 1 1/2 C. milk
- 1 C. shredded cheese (Jack or Swiss)
- 1/2 C. chopped ham (you can use turkey or substitute with your favorite meat or vegetable)
Mix all ingredients except cheese and ham in blender. Pour into a 9-inch pie plate. Put ham and cheese on top and push down into the mix. Bake at 350 degrees until done. Allow to set for 10 minutes before serving.
Greek Potato Salad
- 3 potatoes
- 1 lg. onion, chopped
- 1 Tbs. chopped parsley
- salt, to taste
- pepper, to taste
- 1/3 C. olive oil
- juice of 1 lemon
Boil potatoes until almost tender. Drain. Slice. Place in large bowl. Add onion, parsley, olive oil and lemon juice. Sprinkle with oregano, salt and pepper. Toss lightly. May be garnished with Greek olives or parsley.
- 2 large cans lemonade concentrate (add water as directed on cans)
- 1 46-oz. can pineapple juice
- 1 2-ltr. bottle ginger ale (cold)
Mix lemonade, water and pineapple juice together. Pour in cold ginger ale just before serving. Mix with ice. Garnish with lemon slices if desired.
